Background: Montano micro-mill is run by producer Juan Ramon in Costa Rica. This coffee gets its characteristic cinnamon-spice taste from the anaerobic process in which ripe coffee beans are put into air-tight tanks for a period of time. Deprived of oxygen, these cherries develop a beautifully distinct flavor due to the acids created during the fermentation process.
